When the order’s placed for the latest hop.

When fires burn and cauldrons bubble,

When yeast is added which leads to trouble.

When what ferments is something new

Then it’s a special batch by Yulli’s brews

These beers have been brewed as limited release beers over the years, some brewed just once, some once a year. For more information on their availablity, get in touch with us at - brewery@yullis.com.au

Britcher's Bar Nut Brown Ale

ABV: 7.1%
IBU: 52

A big & bold Nut Brown Ale, dangerously quaffable at 7.1% whilst presenting nutty, biscuity flavours in conjunction with floral Australian Ella hops. A mix of cashew, pecan, hazelnut, walnut and sunflower seeds were all roasted and used throughout the brewing process to compliment the chocolate malt backbone this beer has.

Louis Black IPA

ABV: 6.6%
IBU: 62

'Louis' is a smooth and creamy black beer packed full of Australian, American and Japanese hops to provide a unique blend of lemon & stone fruit, backed by a delicate roasted malt character. The beer is rich in hop character, but ultimately a well balanced IPA coming in at 6.6%. Originally brewed on a home scale for competition, this beer brings back to life the beer which kicked things off for Yulli's Brews over 2 years ago

Sheila Von Trapp - Lemon Myrtle Witbier

ABV: 4.7%
IBU: 19

Sheila is a traditional Belgian Witbier with the addition of 5 key spices to add complexity and flavour to this easy going summer wheat ale. Coriander seeds, star of anise, cloves & lemon rind are added at the end of the boil, plus a big whack of lemon myrtle both in the boil & post fermentation to lift the citrusy aromas through to the glass. It pours very pale and light, with a classic cloudy witbier character.

Brian - India Brown Ale

ABV: 6.5%
IBU: 52

Brian is an IPA with a lovely chocolate-nutty character which is complemented by a massive presence of the amazing American hop variety Centennial. Brian pours a lovely dark brown, with hints of roast & chocolate from the addition of roasted barley, and has a substantial bitterness from multiple additions of Centennial hops. The aroma has an earthy fresh pine character which blends quite nicely with a subtle chocolate hit.

Guy McFly - Rye IPA

ABV: 6.3%
IBU: 58

Guy McFly is our variation on an American IPA, with a spicy twist from the addition of Rye Malt. At 15% of the grist, it imparts slightly spicy, puckering notes which are complemented by the use of some of the classic American 'Big C' hops in Chinook and Citra. Guy is an IPA for hop heads, and for the generally inquisitive crafty folk too.

Tinker Lawson - Clean Ale

ABV: 5%
IBU: 20

Tinker Lawson Clean Ale is our take on a classic Cream Ale style beer. A simple malt bill backed by a light, but flavoursome hop profile makes for a clean and easy session beer aimed at drinkability and no fuss! American hops Chinook and Amarillo are used within Tinker and are used sparingly, to provide a light, fresh hop finish.

Kyle Butters - Chardonnay Barrel Aged IPA

(Brewed in collaboration with the Keg & Brew Hotel)

ABV: 6.4%
IBU: 52

Kyle Butters is an amalgamation of various inspirations coming together to create a uniquely complex, yet extremely quaffable barrel aged IPA. Aiming to emulate some of the thick, woody, buttery notes from old school chardonnays, we threw this sucker in an old french oak barrel that had seen 6 vintages of chardonnay been held in it, where it was fermented & aged on oak for 2.5 months. This has helped round out the body of the beer to give that lovely buttery character which follows on the mid palate. We chose to work with 4 classic US hop varieties in Amarillo, Citra, Chinook & Cascade to give off a pungent fruit bouquet of flavours on the nose, which carries through to match this beautiful oak complexity in great harmony. With just enough malt to support this excessive late-hopping regime, this beer is supremely balanced, and finishes as smooth as butter.

Randy Daniels - American IPA

ABV: 7.2%
IBU: 57

Randy Daniels is a classic West Coast American IPA in which we dialled it up a notch and went for a big, bold IPA that doesnt't hold back on anything! Big Caramel malt flavours combine with a massive bitterness to fill your palate with lupulin delight, whilst breathing aromas of peach & mango from Aussie hops Vic Secret & US Amarillo.

Justin - Blood Orange Pilsner

ABV: 4.5%
IBU: 27

A light & bright Pilsner base beer which made use of 4 different hop varieties; AUS Summer, NZ Pacifica, NZ Pacific Jade & NZ Organic Cascade, and all Australian Pilsner malt. Post ferment, we added a concoction of cold pressed Blood Orange juice and Campari into the fermenter, which has added a lovely Citrus nose to the beer and an assertive, yet palatable bitterness to the back end. Would pair perfectly with a Campari on ice as a somewhat boilermaker style drink experience.

Nathan - Nelson Sauvin IPA

ABV: 6.6%
IBU: 40

Nathan is a wonderfully aromatic fruit bomb of an IPA, where we got the rare opportunity to showcase one of our favourite hops in NZ's Nelson Sauvin. Light and bright on the malt profile, and a relatively low bitterness to make way for aromas and flavours of pear and white peach before a nice and dry finish to draw you back in for more.

Simmy - Hazlenut Milk Brown Ale

ABV: 5.9%
IBU: 37

10kg's of roasted hazelnuts went into the mash with this bad boy, along with a hefty whack of chocolate malt and lactose to create a deliciously creamy brown ale reminiscent of one of our favourite spreads, Nutella.

Tila Frontenac- Maple Cream Ale

ABV: 6.8%
IBU: 30

Tila is our variation on the classic North American style Cream Ale, where a clean, dry mouthfeel is achieved by the use of the finest Australian Pilsner & Wheat malt, and NZ Pacifica hops. With neither of them taking them the forefront, the addition of 5L of Organic Maple Syrup imported from Ontario, Canada helps to beef up the flavour profile... and the ABV! The result is a dangerously drinkable pale beer with subtle maple flavour coming through on the mid pallate, and a lovely sweet aroma to draw you in!

Dad's Army Barrel Aged Range

Chris' Imperial Stout  Released in Winter 2016, 2017 & 2018

ABV: 8.6%
IBU: 71

Named in honour of the important father figures in our lives, this beer kicks off the 'Dad's Army' Barrel Aged range with a nod to the brewers father, Chris. A big & bold imperial stout aged in Lark Port barrels for over 3 months, this beer shows rich chocolate and roasted flavours interwoven with the complexity of the barrel character, which is present at all stages throughout the pallate - giving classic sweet plum and rich port character to this already overwhelming beer. Best enjoyed at warmer temperatures, and savoured over every sip.

Pops' Berliner Weisse  Released for Summer 2016/17

ABV: 3.5%
IBU: 10

A Berliner Weisse which has been aged in French Oak Chardonnay barrels for 10 months. The beer is wonderfully complex and tart, showcasing intricate oak flavour and mouthfeel with a pleasant astringency which compliments the light effervescent nature of this summer wheat sour.

Van's Spiced Pumpkin Ale  Released for Spring 2016

ABV: 5.9%
IBU: 31

Our spring seasonal barrel aged beer for the Dad's Army range is a spiced pumpkin ale, aged on oak for 3 months in Lark Port Whiskey Barrels. A combination of biscuit & caramel malts combine with 25kg of roasted pumpkin in the mash for a rounded backbone, before being boiled with English Fuggles hops and a generous addition of cinnamon and nutmeg to spice things up a bit. Fermented on a classic english yeast strain, and then aged in the barrels for 3 months, this beer presents a complex flavour profile with notes of all of the additions and processes the went into the beer. Spice, pumpkin, english ale yeast character, whiskey all play a part in challenging your pallate for Halloween.

Mike's Red IPA  Released for Autumn 2017

ABV: 7.2%
IBU: 65

This big and bold Red IPA spent some time on Oak courtesy of a Pinot Noir Barrel from our good friends at Gilbert Family Wines in Mudgee. After this time on oak the beer was blended back in tank with a fresh dry hop of some wonderfully aromatic Mosaic, Zythos and Galaxy hops. The result is a super complex Red IPA showcasing rich caramel and toffee notes against woody, currant-like wine flavours imparted on the edge of the palate.
